strict attention to detail. A
regular egg can be too big for
a small batch of six cookies,
so they suggest quail eggs or
the easy-to-find pasteurized egg
substitutes, which you can measure
out in tablespoons.
Quail eggs? When's
the last time you saw quail eggs
at the store? Just use powdered
egg whites, or small eggs. If
the recipes won't work unless
you use a quail egg, then I'm
going to have egg on my face for
recommending this book!

Pans for Small Batch Baking
Kaiser Bakeware
offers several so called
"kids" bake sets,
although I recently purchased
small springform pans and
they weren't labeled as
being for kids, so I don't
see what's different about
them. Remember, anything
small will work, you don't
have to buy special pans,
but if you want to start
cooking in small batches
often, then it would be
smart to get the "real
thing."
